Cheese Stuffed Potatoes

Scooped Potatoes stuffed with Paneer

Potato is the staple food for many of us, specially , if we have little ones. This is a healthy recipe which was concocted by my mother when I was young and today it is a hot favourite with my children.

Ingredients

1 kg Potato(peeled and scooped)
250 gms. Indian Cottage Cheese
2 nos. Onion(finely chopped)
5 gms. Tomato Sauce
1¼ tsps. Red Chili Powder
¼ tsp. Cumin powder(roasted)
½ tsp. Turmeric Powder
½ tsp. All spice powder
Salt to taste
Vegetable Oil for frying
Cilantro for garnishing

Directions

  1. Fry the peeled and scooped potatoes. Put on a wire rack to cool.
  2. Meanwhile grate paneer and mix 1/2 tsp dry masalas in it.
  3. Fill this mixture in the scooped and fried potatoes.
  4. Keep them aside, carefully.
  5. In about 3 tbsp oil, fry the onions till they turn light brown. Add red chilly powder, turmeric powder and salt.
  6. Add 4 tbsp water and cook for 3 minutes then add the pureed tomatoes and the fried scoop of the potatoes.
  7. Cover and cook till dry.
  8. Then add the grated paneer if any is left.
  9. Cook for 3 minutes and then add the potatoes which have been kept aside. Cover & cook for about 10 min. stirring gently after every 2 min.
  10. Put in a serving bowl,garnish with chopped corriander leaves.
  11. Serve with hot parathas.

the recipe is good for my family to eat with paranthas as weusually eat them in breakfast
