im born n brought up in saudia never heard that falafel is made of chickpeas n corriander leaves besides no lemon n garam masala is added.....its made with green fawa beans or sometimes with green lentils which we call hari moong and parsley .taste of sweet eating soda is also dominant in it......sesame seeds r also added and its dropped in pan with special spoon so that all falafel r of same shape n size.its not eaten with garlic sauce but if any one wants original recipie of lebaneese garlic sauce they can note down......take 2 tsps of fine garlic paste in abowl add 6 tbsp of mayonaisse +half tsp white pepper powder+salt as per taste+juice of half lime mix well.take half cup cooking oil .add 2 tsp in bowl of mixture n stirr again add 2 tsp and mix ..like that keep adding little little in the mixture till all the oil is mixed well keep in refrigerator for half n hour n serve as a dip sauce with french fries or chicken broast or nuggets etc etc.

in dubai we get filafel made from channa dal. it is ground with coriander, green chillies, ginger, garlic. it is made with the filafel machine, then put in the kabhoos(rotis) filled with salad. you can make it and fill the salad of your choice alongwith a dash of chutney

I am from the Middle East. Falafel is never served with mayonnaise but with tahini (Sesame paste+water+lemon Juice + salt) and a little finely chopped lemony salad on the side. Also there are diffrent types of falafel, the most authentic one being the egyptian one and it is made with green fava been, never chick peas. Chick peas has been adopted by Lebanon, Syria, Israel and others as green fava beans are not always easy to find. The yoghurt sauve might be "labne" but is not usually served wu-ith falafel. Bon appetit.

Falafels are served with a dip or sauce of mayonnaise , mixed with garlic paste ,salt , pepper and a squeeze of lemon juice . This dip is known as Aioli . If you have this yogurt sauce recipe we would like to learn about it .
