Luckhnavi Shami Kebab

Mince Cutlets

The combination of fresh garam masala used in these kebabs gives it a different taste .

Ingredients non vegetarian 20 servings


    • 1 kg mince meat  
    • 1/4 cup channa dal / gram dal
    • 2 tbsp ginger
    • 2 big potatoes
    • salt
    • 8 whole red chillies

          GARAM MASALA :

    • 12 whole black pepper
    • 2 black cardamoms
    • 3 green cardamoms
    • 2 tsp Jeera (cumin seeds)

          FOR   FILLING :

    • cilantro
    • 1 big onion
    • 5-6 green chillies

    Directions

    1. Put the mince meat, dal, ginger, potatoes ( whole without peeling ) and red chillies in a pot and add water to cover.
    2. Cook on high heat so that the water dries up and mince is cooked.
    3. Remove and cool. Peel the potatoes and mash while hot.
    4. Grind rest of the meat and dal mixture and incorporate the mashed potatoes in it. Mix well.
    5. Now roast the garam masala and grind .
    6. Mix this masala and salt to the keema potato mixture .
    7. Now cut cilantro (coriander leaves), green chillies and onion finely and fill in the kebabs.
    8. Shape in form of cutlets and shallow fry.
    9. Serve with salad and mint chutney.

    I love cooking..actully i like your recipe when i read it...when ever i made shami kabab...i dont know why it becomes so soft .. may be i don't know the right quantity. can u tell me right amonut of ingredient. please tell me in grams or cups...in (USA) no kg .here we buy in labs (ponds). so i don't understand measure..please explain me very clearly...thank u.....
