Mulligatawny Soup

Curry Soup

A favourite Anglo-Indian soup meant to be as hot as a curry .

Ingredients non vegetarian 4 servings


    • Chicken bones few pieces
    • Onion 1 small finely sliced
    • Butter 2 tbsp heaped
    • Besan 4 tbsp
    • Chilly powder 1tsp
    • Salt to taste
    • Currypatta 1 stalk
    • Bayleaf 2 pieces
    • Red vinegar 1 tbsp
    • Ginger/Garlic half tsp
    • Haldi (turmeric)1 tsp
    • Stock 4 cups
    • Lemon juice 1tbsp
    • Tomato chopped 1 small

    Directions

    1. Heat butter and fry onions till golden brown.
    2. Add in vinegar with ginger garlic , chicken bones and fry well .
    3. Then add the chopped tomato with chilli powder , haldi ,salt , bayleaf and also add in the stock and currypatta .
    4. Cook till it begins to boil .
    5. Roast besan on a griddle and make a paste with water and besan and add to the soup stirring continuously .
    6. Let the soup cook till the right consistency is attained then remove from fire and strain .
    7. Add lemon juice .
    8. Before serving pt a few pieces of shredded chicken and boiled rice in a bowl and serve with lemon slices .
