What is a halal substitute for cooking wine and white wine?

Wine, in cooking, is used for its ingredient "Alcohol" only. Now if all the alcohol evaporates, then what is good of using wine for ??? After adding the wine the fry pan is not left on stove ( so there is no chance of evaporating 100% alcohol). The cook keeps the pan in his hand and stirring and pour wine in it (keep stirring the pan) and immediately transfer the dish in the serving dish/plate. This is my brotherly advise not to use any ingredient which is suspicious from religion point of view.

Alcohol on cooking on high flame evaporates! so go on using wines as the way you wish....
